I found this recipe on another blog as I attempted to make a home version of a Chipotle bowl. With some tweaking here and there, I think I found the perfect recipe!
The ingredients are:
About half of a red onion, finely chopped.
Half a cup of cilantro, finely chopped.
Whole tomato, finely chopped & seedless.
Half of a jalapeño, finely chopped & seedless. But if you're a daredevil and a spicy food enthusiast, then feel free to keep the seeds.
Half a tablespoon of salt.
Two tablespoons of lime juice (fresh squeezed is best, but ain't nobody got time for that).
Procedure: combine, mix, and you're done, LOL.
Yeah, the most time consuming part of this recipe is all of the chopping into tiny little bits. Especially the jalapeño, and word of advice, don't rub your eye while doing this because your eye may or may not burn off.
Once it's all mixed, this is what it should look like.
It smells phenominal! So fresh, and completely beats out anything you can find in the potato chip aisle. And of course if you're Chipotle obsessed, you can now enjoy this at anytime. The great thing is is that this recipe calls for things you probably already have in your kitchen.
I suggest you buy the "scooping" style tortilla chips for this salsa, because this isn't the type of salsa you delicately dip, you DEVOUR this bad boy.
